2016 & 2015 White Burgundy (Sep 2017)

Bright yellow. High-pitched aromas of lemon, apple, spices, crushed stone and white flowers. Utterly seamless, silky wine with compelling elegance to its flavors of white peach and white flowers. This Chevalier boasts a creaminess that will give it early appeal, but its penetrating chalky finish also gives it grip and lift for a graceful evolution in bottle. A perfect example of a 2015 that gained in energy and definition during its final months of élevage. Really spreads out on the back to saturate the palate, with the apple and mineral notes carrying through. The acidity here is just 3.8 grams per liter but the pH is a healthy 3.17, according to Boudot.
