Chablis: 2014 & 2013 (Aug 2015)

(the only grand cru chez Droin that’s done entirely in stainless steel): Pale yellow-green. Very pure aromas of flowers, lime, chalk and spices (Droin notes that his parcel at the top of this grand cru has very chalky, powdery, white soil like that of Champagne). Not a powerful or weighty style but very pure and taut, conveying intense flavors of lime, crushed rock and crushed herbs. Finishes long and subtle, with a pungent whiplash of chalk. This will need time.
